You sure your weapons didn't go red from lack of stats? Giants blood triples the attribute requirements on weapons, so it's actually kinda hard to make use of it at low levels. Sorry if that's a terrible accusation, I dont mean to be insulting at all lol. I've seen people not realize things like that before.
Depending on attack you speed or damage could go slower when two-handing
The play with Giant's Blood anyways is to get a shield with a 2-hander

Depends how good your 2Hander is over your 1Hander.

I just grabbed Giants Blood myself and pretty much found my Mace Strike DPS virtually unchanged.

The reason for that is despite the actual per hit damage being somewhat higher (1Hander had 101 physical damage, 2Hander had 141) the attack speed on the 2Hander was so much slower that the dps didnt really change.
Just traded smaller faster hits for slower bigger ones.

The real power will come along later with further investment in the passive tree.
Specifically, the ones for boosting 2Hander damage. The one near the Mercs area provides +100% 2Hander damage in just one cluster.
Another cluster just across from the +25 Strength cluster has another +100% 2Hander damage.
Am I the only one here that feels like this should not exist in the game? Its basically a crutch that 99% of all warriors have to take for any build, outside of minion, for a needed damage boost.
Same goes for resolute stance.

I'd hardly call it a crutch when you need to bend your whole build towards using it properly.

Its main power is for Dual Wield builds that now get to take advantage of the heftier damage boosts towards 2Handers.

As a Shield based Warrior so far (level 51), My damage has been primarily Resonating Shield (trash packs) and Shield Charge for single target with some mace swings in between.
Taking Giants Blood hasn't done a damn thing for my outgoing damage aside from allowing me to use Supercharged Slam.. Which is barely doing more than my Shield Wall+Shield Charge combo while taking ages to come out lol.
Going to a 2Hander didnt even change the overall DPS of my Mace Strikes compared to my 1Hander.

So yeah, So far, I'm not blown away by Giants Blood and what its doing for my build at least.
1 thing to keep in mind - Many skills impose a damage penalty when using 2 weapons. usually around 30% penalty. This can often reduce 2H weapons to below 1h stats. To test if this is the issue, equip 2 x 1H weapons and check if there is a similar behaviour.

As for benefit of giant's blood, it lies well beyond just base damage stats. 2H weapons can have up to +7 to melee skills on them. 1H max out at +5 to melee skills. The levels difference can mean a massive increase in effect of skills. Check the wiki for the level scaling and compare a lvl 35 skill vs a lvl 39 skill. (20 for gem, +3 amulet, +2 on gloves and +10/+14 for weapons.)

OF course, having to invest in the weapons as well as having to increase stats at the expense of other bonuses will help to even things out a bit. It all comes down to priority and purpose. Giant's blood can make a world of difference, or be a hinderance, all depending on how it is handled.
Considering on most skills it explicitly says something along the lines of "does 30% damage if dual-wielding" I'm not sure what other explanation is necessary as long as the text is being read.

Skills have the -30% damage penalty because they tend to strike with both weapons.
It works out to be significantly more total damage for the strike.
With some other skills, They get an attack speed boost when Dual Wielding (Armour Breaker as an example for that)

It's as i said before, It isn't a crutch. It is a build defining passive. You don't just take it without having a plan to maximise the benefit from it.
