I done him with Merc, Sorc, Witch, Monk by now, and the minion phase is the least of the problems usually for me.
Merc was my first time dealing with him and thus was the 'hardest' round of combat since I had to learn his move set and the dodge mechanics of the game, Warrior I just face tanked him, Monk I bing bong'ed him to death, Sorceress was interesting as I feel my chosen skills weren't well suited to the fight. (Ember Fusilade + Flame wall + SRS)

Honestly, not only is that part pretty easy to deal with, regardless of the build you're going for (if you were able to get to that point, dealing with that amount of mobs shouldn't be a problem at all), but it offers an opportunity to recharge your flasks too.
Quit now if you think this boss is bad game design. He's the first boss, because he's easy for all build setups. Having some Dark Souls or Elden Ring experience is invaluable here.

This game has massive amounts of different loot and a skill tree larger than the tree outside your home.
But you can only pick one specific set of gear and you have to follow the exact same path on the skilltree as everyone else.
It's called freedom of choice by GGG.
So go start a new character and do exactly as the build-guide says.
Most people in this game can't or don't want to think hard enough to make their own build. That's fine.
But the campaign is the easiest part and if you can't get past that, you're suffering serious skill issues.
And I use zero flasks until this point of the fight.

To assume I haven't played or beaten both Dark Souls and Elden Ring is a mistake.
