To get level 5 uncut gem, just progress to higher level areas.
If you can't defeat it, the only things you can do are: grind to higher level, change build and/or change playstyle. There is no other way.
Sadly, this is just my experience, but warrior using a staff is generally better than monk using a staff. Classes only affect where you start on the tree, and which ascendencies you can use, and I'm not a fan of the two Monk ascendencies. Warrior is also better positioned for melee focused builds than monk (since monk is more in between spells and ranged).
If it was me, I'd restart as a warrior and use the staff/equipment and skills you got already from playing a monk. You can also choose monk skills as you level up.
Also, you don't HAVE to use any one weapon, you have 2 weapon slots that can be swapped with x. You can also set specific skills to only use one weapon and when you hit that skills hot key, it'll auto switch to that weapon.
That means you can have a 2 handed mace in one hand and a quarterstaff in the other hand, and use the skills from both at will.
Q-staff skills attack faster, and focus on building freeze/ice up really well. It also has the bell ability that works with any melee weapon. Drop the bell then swap to your 2 handed mace for sick damage.
Since you can use both weapons and skills as either class, I just suggest going Warrior for the titan ascendency since it's SO much better than the monk ascendencies, even right off the bat.
I understand if that is confusing since you are just starting, but trust me, you will get to teh point where that will be REALLY useful before you know it.

Yes, this game is a waste of time at the moment. I recommend returning to it after 6-12 months when it's more balanced, optimized and polished. Now everything you do has a high chance of being broken with updates, and all characters will remain in an Early Access League that won't transfer to Standard.
If its the funny old guy boss , i just kite him around the crypt. Make sure you have movement speed on your boots as soon as possible for any build, check the vendors everytime you level up and buy a pair. Make sure to buy a new weapon with higher dmg stats from vendor.
And also put on any rings with cold resistance and charms.
You have not wasted your time at all. Just your new and a bit of knowledge will help you on your way.
Ranger (or Merc) using a bow is in general my recomended first class as well. Super easy, and the ranger at least gets very fast movement speed (merc isn't that much slower).
Bow skills though are in general better, so even if you play a merc, still use a bow.
Merc has a more offensive ascension (Witchunter) but Ranger has Deadeye, that is very defensive and moves faster (and uses skills faster). Both are great. You can use any weapon with any class......there is a huge difference between a low level bow user and a low level xbow user, to the point where I don't even use an xbow in my alt slot for ranged characters (I use a mace/qstaff for melee chars pretty much always).
Or a spell caster, dont go melee for first run if your still learning. A;ways check the vendors, lookk for movement speed on boots and + level to gem skills on your weapon
(eg- + 4 to lightning gem spells) if your a caster.
I've been anxious to try out new stuff too, but if you're struggling you probably should focus on improving your gear. You'll just have to progress for the higher tier gems.
You might also want to save extras in your stash in case you play other characters. Then if you're in a similar situation where you're overleveled you'll have gems in your stash you can use without needing to have progressed.
For fighting high-HP targets like bosses, it's preferable to use damage-over-time skills (damaging ailments like Bleed, Ignite, Poison) or Chaos DoTs, because they allow you to still do lots of damage even when you're dodging and avoiding boss attacks.
Plus, a ranged character lets you have a large kite area so you can even shoot from outside of the boss's attack range.
I suggest deadeye because you can get a really high evasion with them very fast (and evasion is very useful, especially for the first trial, but over all), and because you get significant damage reduction as well after the second trial.
Also you won't have as good movement speed boots early on if new (maaaaybe 15%), and tailwind adds another 10% to that, which just makes the game feel like it's faster.
Warrior with Titan as the ascendency is also amazing though, so if you like quarterstaff skills, that is a great way to go. A warrior with a 2handed mace in 1 weapon slot and a qtsaff in the other, is pretty insane. You do a TON of damage with the 2 handed mace, but the q-staff can freeze a boss/enemy fast, and get the combo needed to drop the bell in the process. Then pound on that bell and boss with the 2 handed mace and it's so dead it's silly.
You also get leap slam which makes clearing packs super easy, you just jump from group to group killing everything. Super fast/easy start for anyone, you just need to get a decently high damage 2 handed mace to make it cake.
For a spell caster I suggest witch, as their initial nodes give both spell damage and minion damage. You wil very quickly have a quest that gives you 30 spirit, which can be used to have something going called summon raging spirit. Even if you focus on spells over anything else after the start, that adds ALOT of damage. Also you can do wand/sceptre, which both gives you more spirit for your own minions AND gives you 2 melee skellies to tank for you and distract enemies (and explode for high damage). The sceptre can also buff your minions, you really wanna look for +damage mods like +1-4 physcial damage and +1-12 lightning damage as that increased the damage of your spirits (and you can/will have 10 of them out) drastically especially at low level. You can literally kill everything just with them.
You get additional spirit though with the sceptre so you can summon other minions to do more damage for you, that is really another easy way to start without needed a ton of good equipment. Both melee and ranged characters need to get a decent primary weapon to kill fast. You don't need that as much for spell/minion focused characters.
I don't recommend blood mage as your first ascension though if you go witch, it's very powerful but you need to know the game well to make it work. Infernalist is VERY strong though and very easy to build/play.
