Stack more energy shield and you need to really work on resists too.
Then take more energy shield nodes if you're dying too much. You can trade for some gear with energy shield and resists too.
Early on, a split of ES with either armor or evasion is more viable, but the further you get the more you need to pump up str/dex to keep equipping the alternate defenses. The most natural defense for sorceresses is to just focus on ES and pick some of the plentiful +ES% nodes in the top area of the tree. ES can scale really well for a sorc, with notables giving up to +40% increased ES. Being able to focus on just int allows you to take better advantage of the nodes which give you stats from your max int and max mana. The easiest layer of defense to add is block. Use a shield with a +block% attribute, and consider travelling to the far left of the tree to pick the block nodes there. Another option is to build for the Mind over Matter keystone, which turns your entire mana pool into a layer of health.
My Witch has over 1k ES and still gets annihilated by elemental attacks, at this point im not even sure ES works for elemental stuff, I know it does nothing against poison.
Chaos is hard to focus into. You can get a little bit from lucky gear rolls and you can get +10% from a cruel difficulty reward. However, an option for sorcs is to eventually spec into the Chaos Inoculation keystone, which negates all need for chaos resistance. Therefore, people may opt to not take the +10% from the story. If you don't want to do a CI build, you can stack more chaos resistance by obtaining soul cores in maps and socketing the +chaos resist ones into your gear's rune slots.
Resistances apply to damage you take to your ES just as they do to life. If your resistances are good, your ES will be more effective. Poison is an ailment that deals chaos damage, scaling with the combined physical + chaos damage of the hit. It is reduced by chaos resistance, so yes, elemental resistances are useless. If you have no chaos res, it will of course burn through your ES like butter. However, a poison immunity charm can be quite helpful.
You didn't specify how far you are, but I'd expect 1k-1.5k ES from a character who just reached the Atlas. At least, that's where I was at. Right now I'm up to T8 maps and have almost 5k ES which feels quite comfortable, with 1.2k life and no MoM, max elemental resistances and 22% chaos res.

I have a few items in my stash that provide chaos resistance, its not a huge amount but I guess itll be better than nothing for areas heavy in poison and chaos.
As for other ele res its a gear issues and finsing enough of it on gear thats useful for infernalist.
been told I should drop the arsonists for snipers and use poison gas arrow with flame wall and hound for big bang damage, going to try that out and see if its any better, I use corpse explosion a bit too so that may work better with poison gas arrow.
Also switched to using a shield .. helps a lot at letting me face tank damage with the ES XD.
