Why cant i simply choose my passive starting point?

You do by picking your class. If they didn't lock your starting point (well, one of two choices) to the class they'd have no identity outside of cosmetics.

yes, but if i want to use the cosmetics of a mercenary, instead of a woman (to be a sorcerer) i have to go all the way around.
If i could just pick the starting point i could specialize and play the way i want.

It make a lot more sense with how the passive tree structure of PoE1 was setup. Each class started in wildly different locations on the tree which gave them a somewhat stricter role to play within the passive tree. Now with every class's starting point being fairly centralized it would actually make more sense for there to be a single starting point in the center rather than having each class just slightly off-center from each other.

Not really. You still have to choose between 6.

What if you could choose to start from anywhere?

Why ?

Because if the first time you enter this screen (in the tutorial) is to be overwhelmed by an infinite amount of choices, it's bad design.
If you want to start elsewhere in the tree, pick another class.

I haven't played the game yet but it seems to me that choosing a different class for cosmetics is a no go, optimally, because of the ascendancies, right? At least at face value.

Looks like there's way less synergy if you make, say, a Witch to be like a Warrior because both of the Witch's ascendancies relate mostly to minions or spell damage.

I guess some odd combinations might work and might even be more powerful but, in general, it doesn't look like a good idea to me without knowing exactly what you are doing.
