Or is it just endless wave to see what high score you can get? Can the solitude level in the demo be completed?

Yes it can be completed I've beaten both the easy and normal difficulty took about 9 min to finish the level, it was easier once I focused on the challenges to unlock new equipment. I did the challenges on the easiest difficulty, and at this point I have one left to unlock.

Yes, the top scoring players in the world can finish Solitude in about 5 minutes. Its nit that hard once you get the hang of it.
