how do you unlock expert mode
ive tried stuff like no charms no taking damage

For the base game, clear "One hell of a time"

For the DLC, defeat all 5 overworld bosses and give the ingredients to saltbaker where he will make the tart and everyone lives happily ever after /s

you have to beat the game, then it unlocks.

You need to beat the game on "Regular" mode, same on the DLC. :cupup::cuphead:
