Do you need to do the run and gun games?

I noticed that Run and Gun games dont have a check next to them.
Are they JUST for coin collecting / opening up passeges? Or do they give you contracts as well?

No. They are just made to get coins.

They also add something to your 'percentage completed', if you care about that.

The run and guns are not necessary to complete the game itself, but as mentioned before, they do add to your completion rate, especially if you do them in pacifist mode (Which I'll leave a secret). So, to summarize, they aren't needed to complete, but they give coins and help with completion.

no they are completly optinal one of the only main reasons of these are mainly to get coins

The coins you get doing run and gun levels add up to your total percentage and to your grades so i think it's nice to do it although it is optional. you can finish the main game without doing run and guns. My advice for you, seeing that you dont see a point in doing these levels is: beat the game first, then complete the run and guns just for fun, they are nice :))

Yeah, that's what im going to do.
Im gonna be a little bit sad when cuphead ends, so it'll be nice to play the run and guns.
