You can control the number on the pink die. It requires some practice, but you should be able to get the number you want each time with proper timing. And if it's still too difficult, P. Sugar gives you full control.
Since you can control which stages you go to, you should only have to deal with a minimum of 3 mini-bosses. Of course aiming for heart stages is optimal, but if you know you're going to get hurt in that specific mini-boss, then there's no point. It's better to aim for the easier stages rather than hearts.
These are the bosses I feel are the easier of each group, from easiest to more difficult. This is personal preference, so you should try to personally determine the bosses you have an easier time with.
First mini-boss: 3 > 2 > 1
Second mini-boss: 5 > 6 > 4
Third mini-boss: 7 > 8
9 is the memory mini-boss, and that can either be the easiest mini-boss (if the boss glitches and dies immediately), the longest mini-boss (complete the stage normally), or impossible (the boss becomes unkillable). I've had it become unkillable on 2 different occasions, so I'd avoid it if possible.
For the King Dice fight, you can parry the same pink card multiple times before moving on to the next pink card. Sometimes you'll have to dash midair to reach the next card.

I only beat King Dice because of the glitch
Like one thing you can do (even though you shouldn't) is take a screenshot of the memory card game before it starts up. Then you can more easily match the cards.
- For the bottom of the screen, only the blue racers will shoot upwards to attack you. Shrink and rush past them. (Sometimes it's important to bait out their attack early on so it doesn't occur at the same time as the horseshoes.)
- The horseshoes move so slowly that they shouldn't be any issue, but shrink if you need to in order to avoid them.
Memory Game (Monkey)
- Honestly like I said before, just try to skip this one if possible. And you can cheese the "memory" part with an early screenshot of the cards.
- Sometimes the monkey will get stuck to the point where he stops moving but he is still vulnerable to attacks (you'll know he's vulnerable because enemies "flash" when they get hurt). Keep shooting. He'll eventually die and you won't even have to finish the memory game portion.
Cigar
What issue are you having here exactly? If you're using Smoke Bomb, then it should be super-easy to cross the gap. Which means the only thing that can hurt you is the flame projectiles.
Jump over the flame projectiles. Sometimes you'll need to duck. If these are causing you such an issue, then you need to enter a different mind state. There's 2 things that a player needs to focus on: platforming, and damaging the enemy. If you're getting hurt by the projectiles, put all of your focus into platforming and nothing else. (You should keep the weapon fire button pressed, but only focus on platforming.)
You don't have to land exactly on "The End" panel, you can roll a number that's even higher and it'll still count.
If you're having problems with controlling the die, don't continue playing the stage. Practice the first die roll, and restart the stage every time until you have the die timing down. The die timing is really important so you can control which panels you land on. And like I mentioned before, use P. Sugar if it's still too difficult.
Also, if you parry BEFORE the pink die even appears, parrying the die as soon as physically possible, it'll always roll a 1.
For getting the parry dice right make note of the number that comes up right before the one you want, then jump and parry when you see that number. If you want a 2 and 1 comes up before 2, jump and parry when you see 1.
