If you watched Robbaz his first video on FTD, you can actually see this in action. He basically has all the cannon parts stuffed in the rear of the turret, and as soon as it turns, the weight all swings overboard, and he starts capsizing.
On top of that, cannons have recoil too, which can push your ship over.
A cheap way of lowering your center of mass and increasing stability is either adding floaters to the side of your ships (catamaran style) or using stone blocks (high weight, cheap).
