Low angles are better at piercing armour in one hit, high angles deal more damage (especially when exploding somewhere inside).
Note also that angles lower than 20° make little sense for impact shells, since you'll only hit a single block anyways.
120/150/180 for a triple warhead.or 60/90/120/150/180 for five. Pretty sure it can be varied a lot and you can still get some good effective use out of it.
Medium missiles can use 30 degree spread as they are less powerful (with guidance assistance this makes them good at AA duty).
For an aps You can consider frag shells as a substitute to the HEAT warheads as they act in somewhat similar manner. However (again) with proper fuses assist you can make a good AP-frag shell to reach internals.
TL;DR: High spread angle for coverage area, low spread for concentrated damage.
