It's not really needed to land to rearm or refuel though. Just need to stay within resource-exchange radius of the mothership.
You can dock with something using a tractor beam -planes and helicopters do... just note you need to find a way to stagger the launch to avoid collisions
You can activate and reactivate the beam based on fuel/ammunition loads, that will automatically return you to the ship -but you will be pulled in slowly and evenly, making for an easy and inviting target.
The best options are to make small aircraft that are basically throwaways -you keep making them and launching them throughout the fight, or launch something that shouldn't need to dock again during the fight (you just carry them outside of combat to prevent them from needing to use fuel)
P.S it easy to shoot down went it taking off so you yeah and most of my vertical takeoff is a fighter... Air to air only
1- a subveichle spawner and a docking station for each fighter/helicopter/thingie you want to have.
2- Put the Carrier and all the planes/helis/thingies in the same fleet, set the carrier as flagship
3- press Q on each docking station and subveicle spawner and select one of the planes/helis/thingies
4- Add 2 ACBs to undock/dock the planes when you choose to.
5- Optional but reccomended, name all the docking stations with different numbers, then add 2 ACB for EACH docking stations, each activating only ONE of the docking stations, with different activation delays so the launch of your planes/helis/thingies will be staggered and wont cause a messy explosion.
I hope my messy explanation helps, I can make a tiny carrier to show how this all works later if you need to or there is demand.
