How do you make ashes?

I've built everything but the chemistry bench. Maybe that's the key. Still, how do you make ashes? Does anyone know?

Also, does anyone know if the crops still grow without the need for ashes/fertilizer? If so, how long does it take to fully grow from sowing the seed?
