I'd say get Endurance to 20 and then level your main damage stat. You can also invest some points into HP.

hp and stamina are key. you need a lot of stamina to make combos and be able to defend more effectively. damage stats give 3 or 2 dmg/level, which is nothing compared to leveling your weapon even once.

You want to get Vitality to 40 at minimum eventually. I would say put 2 points into Vitality and 1 into Endurance until you hit 20 Vitality.

If you are dual-wield, I would start investing into Willpower next as it is your main damage scaling stat as well as stamina recovery speed increase, which helps with stamina management. Other weapons, just start investing into your main damage scaling stat along with Endurance to push stamina higher.

You should only investing heavily into Strength if you are GS user, otherwise, you just want to put as little points into it as possible to get to Agility ranking A. If you are wearing heavy/plate sets, you will not be able to attain A ranking unless you invest massively into Strength (only viable for GS users) so staying at B is fine as well, anything else will have detrimental effect on your stamina management.

End 20 Vit 20 then End 40 Vit 40 then main dmg stat 60 then end 60 vit 60. If you want heavier armor and you don't scale with str then you will have to lvl it up a bit. Stamina regen penalties for weight limits are brutal.

so softcaps are every 30 points so you get diminishing returns at 30, and again at 60.

I would recommend focusing on 30 vit and 30 end first, building them up evenly until you get to 30 in each, then 30 each into your two damage scaling stats starting with the one that scales better. each of the three weapon types scale damage from 2 stats with one of those scaling better than the other. so just bring the harder scaling one up to 30, and then the other one.

once all 4 of those are at level 30, I'd recommend just doing that again, in the same order, but now up to 60.

you might think "oh man, but won't priority focusing health/stamina mean i'll feel gimped on damage, maybe i should go pure damage build?" and I'd say emphatically no for two reasons.

1) most of your damage comes from the damage values and set effects on your weapon/gear, and the multipliers on the skills in the skill tree (especially spirit/fury skills), and how that ramps up as you progress, and the bonus you gain from stats (while not inconsequential) is a significantly smaller part of that.
2) staying alive through higher health and being able to block/dodge for longer, and ESPECIALLY having stamina to do additional attacks or punish a stagger with more attacks in a longer combo far outweighs the per hit damage bonus you'd get from the damage stats. using the greatsword for an example - you can stagger punish combo bosses with a combination of night's veil, helm breaker, and heavy charged slash. For most bosses this stagger combo can go on for as long as you have stamina to keep doing helm breaker and heavy slashes. having the stamina to do even a single additional heavy slash on the combo far outweighs only being able to do like two incrementally stronger ones from higher strength stats. and of course not dying in one hit, having a buffer to tank or trade a hit to confirm a combo or stagger a boss and do a combo without getting one shot or having to stop and heal every single time you're touched instead of taking advantage of a punish window after the attack that damaged you is the obvious bonus for vitality.
