Alternatively switch to great sword and use Inner Fury. It targets weakpoints directly, but you will need to dodge to the side of each leg to land it.
Some time after breaking even just one leg it can retreat back to regrow broken limbs, which will also regenerate its stamina, the only thing you can do to stall it is throwing javelins until it falls, though that only gives you a few seconds since it will go right back up.
