A reflection is a good skill to use on Viper, it can drain his stamina quite a lot and prep him for punishment.
For the big punishing damage dealing skill, either ruthless or wind piercer. At that stage ruthless might be better, but wind piercer allow you to close the distance quickly. Without the upgrade, though, it's not as powerful.
Make sure you augment your gear--increase its level, especially for weapons--as that could be the small help you need to defeat the boss. I struggled a lot on Volbaino, I believe next major boss after Viper, until I realized all my gear was nearly 20 levels below recommended level.
I can't help with weapon choice as I only use dual-wield.
Greatsword is awesome once you get some skill points to unlock it's potential!
The greatsword, on the other hand, is omega slow. If your parry timing is off, you’re probably getting stomped.

I've ended up chewing through every fight/boss so far with this far more aggressive style of play. Spear obliterates stamina so it's been pretty damn fun.
Combine this with parrying certain attacks that make the boss flinch and you will be able to take huge chunks of their HP in one combo.
Ofc that is a little harder in the beginning of the game as you have less access to stamina, however parrying or perfect dodging with the skill that gives stamina back will make up for it. If you didn't notice you will keep regening stamina if you perfect block over regular block.
