Trying to get in the groove of the game, wondering which weapon is best? i used Dual Wield all through the demo and had no issues. trying greatsword but it seems underpowered for a greatsword. Not very far in the game, just got surprised by viper and his second phase while i had no heals

You really should get used the timings of his attacks. The idea is to brink guard most of them. Some of the enemies outside use the exact same attacks from his moveset, just not all at once in a single enemy. You can practice on them, if you prefer. They do less damage, so it's a bit safer.
A reflection is a good skill to use on Viper, it can drain his stamina quite a lot and prep him for punishment.
For the big punishing damage dealing skill, either ruthless or wind piercer. At that stage ruthless might be better, but wind piercer allow you to close the distance quickly. Without the upgrade, though, it's not as powerful.

Second phase of Viper fight is the easier one, just play it slow, wait for his 1-2 attack and get a hit or two in, back off, rinse and repeat. The only difficult part of phase 2 is when he starts leaping at you several times in a row.

Make sure you augment your gear--increase its level, especially for weapons--as that could be the small help you need to defeat the boss. I struggled a lot on Volbaino, I believe next major boss after Viper, until I realized all my gear was nearly 20 levels below recommended level.

I can't help with weapon choice as I only use dual-wield.

Greatsword is awesome once you get some skill points to unlock it's potential!

I think the spear is the best weapon for a first playthrough if you don’t want to bang your head against the wall. It has really good mobility.

The greatsword, on the other hand, is omega slow. If your parry timing is off, you’re probably getting stomped.

Me? I like banging my head against the wall, so I play greatsword

I love the Berserk anime, so this kind of gives the option for roleplaying that. It's better in the endgame, though.

I have a video about it, but nvm, it's a huge spoiler

You will eventually unlock it as you progress, there is an NPC below the main area of the crevice you can talk to. This probably need some side mission later in the game. I do not recall when exactly I unlocked it....Viper wiped my memory:P

You gotta wait for a while. First beat Viper and unlock the hub. Then one NPC will give you a bonus mission a few bosses later where you will get a thing that augments the gear. I don't know the exact boss it unlocks at since I missed it.
I'm playing with the spear and Viper caused me to switch playing styles from a passive style where I blocked attacks and countered, to a very aggressive style where I stopped blocking entirely and instead just brink dodge and continue the assault.

I've ended up chewing through every fight/boss so far with this far more aggressive style of play. Spear obliterates stamina so it's been pretty damn fun.
I like the spear due to the stamina damage Brink Guarding does. Then I just stuck with it.

My biggest tip is dropping to think this plays like usual soulslikes. This is a game like nioh where you have the possibility to constantly combo on bosses and use your moves to avoid or counter their attacks. The more stamina and regen you have the more and longer combos you can do.
Combine this with parrying certain attacks that make the boss flinch and you will be able to take huge chunks of their HP in one combo.

Ofc that is a little harder in the beginning of the game as you have less access to stamina, however parrying or perfect dodging with the skill that gives stamina back will make up for it. If you didn't notice you will keep regening stamina if you perfect block over regular block.
