I will keep trying different things and see if I manage to make them do it. There has to be a consistent way of doing this.
EDIT: Ok, I figured it out. You basically need to do a heavy attack combo when they have their shields up and then they will do their special red attacks in retaliation that you can counter. Basically you guard/brick guard their combos, do a 3 heavy attack combo that they block and they will always retaliate with theirs special attacks that you need to counter. Do the loop like that 3 times and you are good to go.

Use a definite technique that can be countered by putting in a series of attacks after a shield slap
■ Sword
If you make a series of attacks after the four-strike attack, you can use a definite counter move.
If your weapon is decent, you will beat him, so use a weak weapon!

Because I attack him while he's defending, and he never attacks.
I hit him with three powerful dual attacks and a spear.
Nothing works.
Basically, from my testing they would red attack you only if you slammed on their shields hard.
I switched off brinck block damage and used Ruthless lvl1. My Dual wield were 250 atk (had some 41lvl from long ago)
