I would suggest dodging some stuff you cannot guard properly against and if you cannot hit those furious strikes or whatever they are called, also dodge them.

He doesnt seem overtuned and you have ways to make fight a little easier by using the summon thing

Any weapon will do but I find the Y parry easiest on greatsword due to the animation lining up well for timing where the frames start.
This is actually an excellent boss to just say "you know what? I'm not going to beat this for a bit just to grind the mechanics into my muscle memory." Practice the first phase and only allow yourself one heal to save healing for the second. If you are taking too much damage just die and reset until the first phase is a cakewalk.
It took me 9 tries to complete this boss. It's not over tuned. It's forcing you to learn the basic game mechanics that you've gotten to this point.
Focus on defense and learning the moves. Don't worry about attacking. Both phases become trivial after you learn the move sets. I don't think I even got hit by phase 1 (maybe nicked) the last two attempts before I beat him. You just gotta take breathers and breaks if you're tilting.
Also, there's no shame in summoning or dropping to easy. If you're frustrated, you're not having fun. The point of a game is to enjoy it. I would also say that this genre isn't for everyone. I personally like the challenge.
And when he goes all shadow on you, you can just brink guard, dodge or reflect it. And then lay it on him with a spirit skill. Once you interrupt him, you can drop him quickly.
