1) When you level up, choose attributes that fit your playstyle. If you pay attention to what they improve, some are better for parrying and some for dodging. I’d say parrying is better because, even if you fail, you might block the attack, but it all depends on how you want to play.
2) When you get the prompt to land a critical hit on an enemy, don’t do it instantly. You have maybe a couple of seconds to act, so try to hit the enemy a couple of times before you do it. In some cases, like with bosses, every hit counts.
3) Some enemies are weak to certain elements, so if a boss feels hard to kill, try using fire, for example. That might help.
4) Take a look at your consumables. There’s one in particular that gives you "souls" but also regenerates some health. So, instead of spending those to get the souls, save them for a boss fight, for when you don’t have any potions left.
5) Some of the bigger enemies or those that hit harder are very vulnerable to charged attacks. In fact, if you pay attention, you’ll notice that many of them leave you windows of time to land one every now and then. And, in some cases, this often leads to stunning them, allowing you to get a critical hit in. Even if you can’t land a fully charged blow, try it whenever you can to stun them and break their posture.
That’s off the top of my head. Don’t give up—just try to learn what the enemies do and react to it. Eventually, you’ll be able to react in time and kill them. I hope this helps.
