any way to respec your stats?

You cannot respec your attributes in the demo. You will probably unlock respec later on in the game.

If you picked up the "Primeval Regression Orb" it allows you to reset your stats

This is incorrect, you can reset your stats in the demo with the use of a consumable.

I played it for tens of ours and never got any consumables that reset your stats. Where and how do you get them?

i also got it, you get it after you beat the third trial in the second chapter
