In the past, with the only title I purchased while I still had the demo installed at the same time, as soon as I hit download for the full version, the demo automatically uninstalled to clear the folder structure for the full version (which pissed me off, I wasn't quite done with the demo. I figured to finish it while the full version downloaded). IF this game is using the same logic, where the full game will occupy the same folder structure, and IF the save files from the demo backed up to the steam cloud, then it SHOULD be safe to uninstall.
My personal recommendation however, as long as you can afford the hard drive space, leave the demo in place until after the full version is installed and working, just to be safe.
