Do you have only physical characters for some insane reason? Use elemental magic, including the very obvious one, considering they are undead.

You can have mage at that point. Fire kills them.

You need a mage versus gargoyles as well. The game really forces you to have a spell caster early.

Yes, and it's heavily implied to make the MC the mage due to it's archetype passive.
