Otherwise I'd prioritize clearing the dungeons first since they might open up more things to do. You're hampering yourself if you leave them closer to the deadline.
I'd suggest clearing any dungeons in one day. First ones tend to be the hardest to achieve that. Use Mage archetype on MC for MP issues.
As noted above, you can complete all dungeons in just one day, especially if you use the Mage archtype on the main character (who has special passives for all archtypes unique to overworld combat). The Mage's restores the party's MP, allowing you to go as long as you want in any dungeon. However, it can take some grinding to do so, and while using multiple days on a dungeon doesn't feel good, you are given more than enough time in the game to do everything, even if you don't play efficiently. I had about two weeks left by the end after I had every Royal Virtue and Bond and side quest completed, that I was able to burn doing whatever little stat boosts I felt like, and that was with in hindsight several wastes of days.
