I would not consider this true for Metaphor. After you take out the first dungeon, some additional options open up. I wouldn't say these are better or worse than what is available before the dungeon is beat, but options are nice. And even if you finish the dungeon as late as possible, you can still do that other stuff after.
I would recommend attempting it at least two days before the limit. It's a lot longer than one would expect and there's a decent chance you're going to be running low on resources as you approach the end.
The time doesn't 'skip' forward after a main mission, so you can clean up side content after, and it usually unlocks a few more to do in the same town, as well as maybe more Bonds.
If you finish it early you have freetime until the deadline, and if you don't finish it early as long as its completed before the deadline you are fine as well. So personal preference.
