I play on hard and spent about eight hours on that fight. I went online and found an archetype combination that kills him pretty easily however, it involves Strohl being a Wizard I think. I beat the fight on hard but I hated the way I did it so I started a new game- also on hard but now I'll be ready for that fight.
To answer the original question though, you need to learn how to use the various archetypes and which combinations are good for specific bosses. You'll also want to use consumable items regularly.
Also, there's a pendant you can buy for 40,000 Gold (I forgot the name of the currency) which allows the wearer to take two turns back to back. Buy that item and put it on the strongest party member for any given boss.
Normal is just challenging enough without being too hard or too easy.
Hard is definitely hard, and wasn't for me at all, it adds one turn for the enemies so you need to be way more strategic.
And easy is probably a story mode. If you want story go easy.
Personally I need a slight challenge to make the game and story impactful and satisfying, so I play on normal.
