Playing the demo and trying to defeat the secret boss on hard
kinda putts me off on buying this.

The game tells me I could stun him, doesn't work.
The game tells me there ways to negate dmg by playing defense and on, but this fight just doesn't give you any air to do anything.

2knights and a warrior, I can't even spam the weak spot moves since he one shots my party 2nd round.

I beat him on hard at level 12, with Mage / Explorer / Knight. Use the taunt skill of Hulkenberg and he mostly won't use his AoE attack, also don't be afraid to use your healing items.

I tried to beat him at level 9/10 with the starting Archetypes but it didn't work, you have to adapt to your enemies.

Use the pierce synergy move that also lowers its defense, It only costs 2 half turns since he's weak to it, so he drops pretty fast, assuming you don't miss of course. Using the knight's provoke skill helps reduce the times he uses the AOE, as stated above, and in some situations the synergy skill that nulls physicals can also be useful. Keep characters that are there for support/utility in the back row, so they don't die as easily when it does use the AOE. Don't be afraid to use items when helpful. Alternatively, you can cheese it by using stun arrows, and resetting the fight until it lands.

Pretty sure using taunt doesn't stop him from using AoE's. Or any boss for that matter.

It's not working all the time, but it prevents it from doing the AoE every turn so you have some breathing room.

Bosses can still use AOE attacks just fine; I'm pretty sure taunt effects don't change their internal move priority, just the target of their single target moves.

I still have no idea which one you're talking about. Saying secret boss makes me think I missed some early game boss hidden behind an illusory wall or something

Fair enough, if you google "secret boss, demo, metaphor" you'll find it. It's not a real secret just a Dungeon, you need to get knowledge level up to proceed the quest and the lady is infront of a store in the main city.

For me, it's all about the Knight's pierce synthesis skill.

Maybe it has just been a string of coincidences, but the amount of standard attacks bosses use when I'm actively using knight's proclamation feels much higher than without. But I haven't bothered with longer tests, so it's possible it's not a real thing. They do occasionally use AOEs still, regardless, but it just feels much reduced with the taunt active.
