All display settings (Resolutions) seems to be working for me.
My config: Win 11, Intel Iris Xe graphics @ i7-1260P, 32" MSI Optix MAG321QR-QD WQHD
These are some screens from my game, with random settings.

The screensize in the msi menu, is your monitors native resolution, this has nothing to do with the game, if the game view resizes, like shown in my screens, then the game runs fine, and resolutions work as they should, if this does not do the same thing, and like in my screenshots, the gameview stays at native 1440p, then probably upscaling is used as native in your msi menu/graphics settings menu.
Go in to your main graphics settings, look for upscaling and screen resolutions, if this is set as main, turn that off, or set it to specific games only.
I've put a picture here of what it looks like when I set the desktop to 1920x1080 60Hz.

The Intel Iris Xe cannot scale up and therefore has no settings in the driver.
I have the same problem, game just ignores any resolution I pick and stays at native no matter what while in full screen.
*EDIT: Ok, so the game does not ignore the resolution picked, it just acts in a way you dont see very often. It stretches the image up to the desktop resolution - so all that happens is you get a lower detailed image. This sucks for this game, as there is a lot of staring at text. A lower res would normally make things larger - if uglier. But in this case, they remain small but blurrier at lower res's.
