I just keep enough of each product, to not run out of anything by the end of day. I do this by giving each item 2 shelves each, initially, and expand the display to an extra shelf if it ever sells out completely. I have found the majority of stock needs no more than 3 or 4 shelves -- with the exception of big items, like toilet paper and potato bags, that can take 8+.

Restocking costs around $7K, daily (ignoring the local markets, because they suck) and with +10% on the market price of all items, profits average at $4.5K (income is up to $14K). You could be more reserved with your supply cost, by displaying all products vertically -- this should provide your store with a clear visual of what is running low at any point, and then you can afford to just order on that basis. This will likely only give a small bump to your profits, though.

The only other suggestion I have to max profits, is to setup your store to run itself. If you don't need to be present, something can be gained from using the local markets. They do sell everything at half price, after all. The issue is, it takes far too long to shop this way -- but if you aren't needed in store, you got 15 minutes to save as much as possible.

For the most part, it is very easy to get the store running itself. With product displays as described above, 6 restockers will manage it. The only thing they fall behind on, is the produce. Otherwise, you only need 1 guard (optional), 2 cleaners, 2 helpers (with 2 scales), and 6/7 self-checkouts.
as bunky said above, i tend to go and run to the market for expensive stuff llike coffee.

really increases your profits, saving dollars is a lot better than saving cents.
I am still super early with a small store. but for my casual "Two boxes worth of an item on the store shelf" mindest, space to hold 4 spare minimum to reduce the risk of your restockers standing there with broken brains holding a box with two bottles of oil, crying they have no valid shelf to put it on instead of just putting it down automatically.

I'm sure the intended reason for twice or more storage than what is on the shelves is to make sure you can restock fully before ordering more. Even expanding later,

Having to drag boxes of peanutbutter across the street out of stocker AI range in the middle of the day, when using a phone alert wholesale discount because oops one box more than I could store at the time, AI broken... yeah. Spare space is insurance for not breaking your staff's little minds, more than it is insurance for not running out during the day.

(I am going to be skipping produce like a coward because just thinking about it gives me Real Grocery Store Flashbacks. Yes I know staff can deal with that for you. Why would I subject my staff to "No, no the seasonal fresh harvest apple tote bags are 99 cents a pound, not per bag")

After having to restart several times I'm finally at max level with a few more expansions to go and I decided to skip produce this time until the very end, It's just too labor intensive.
