However you can find what items are cooled, frozen, etc by going to your computer, open the Market application and use the sort options at the top of the list. Next to 'Storage type' you will see a drop down menu. Click that.
As far as on the licensing page. There's no way to tell other than using some common sense and/or taking an educated guess.
As for why you can't put bottled water and soda on a shelf, it's an early access game. Maybe eventually you'll be able to. Or maybe you won't, because managing your space is part of the game, and they wanted water and soda to be a fridge item so you need a fridge for them. There needs to be a balance in the game, and allowing shelf space to be used for soda and water frees up the fridge for more room for the other fridge items, making the game slightly easier. ...throwing off the balance. Just theorizing.

I'm surprised to hear that eggs don't need to be refrigerated.
The coating outside the egg is scientifically called the bloom. It is full of bacteria that can contaminate nearby foods, so, eggs from the market have it washed off, inspected, and a new bloom re-applied. In either case, the more the egg is handled, the more the bloom is removed and the egg becomes more likely to spoil, so in many places, it is actually illegal under health codes to handle eggs directly a lot. Yes, I've sen people arrested for overhandleing eggs. But yes, it is better to refrigerate eggs is not using them within 1 day of purchase.
