I was actively looking at the artichokes when an NPC walked out of the store yelling about not finding the artichokes...I was tempted to hit him with a bat

Oh it's not just me. I get artichoke complaints when there's plenty available too. Ironically, they're positioned as one of my most accessible pieces of fruit and veg

Experiencing the same thing, but it's been happening with various items since before the Xmas update for me (which is basically since Day 1 of playing the game). So, the only customer feedback I pay attention to is when a customer says something's too expensive.

I don't know about that. There seems to be an inconsistency with artichokes specifically (at least, for me). I've not sold any (meaning they're all there) and still had people complain they couldn't be found. Double-checking clearly shows the 24+ that are up for grabs.

Yeah there is definitely a bug with the artichokes. It has been happening with a few products, but especially artichokes. It has been reported a lot and the devs are aware
