How do you stop restockers from stocking up a specific shelf/fridge?

Every time I try to empty a shelf, those ♥♥♥♥♥♥♥♥ fill it back up before I get the chance to take off the label, and then they have the audacity to throw away the boxes, so I can't empty them again.
The only reason I'm not firing them, is because it would cost me money to rehire them after I'm done rearranging my shelves.

On a related note, how do I get empty boxes without emptying a box?

In hiring area there's an option to stop them from restocking but this will completely stop them I mean they will stop working till you tell them to go working again. The only way of disabling a specific shelf or rack is using mods. There is a mod for this task on Nexus but I'm not sure if it's updated to work on current game version. For empty boxes, there is a mod on Nexus too called Pocket Box or anything like that.

Yes, there is an option in the same place you originally hire staff. Restockers have 2 switchable options that can help bring back control of your store. The first option should be Work On/Off, and the 2nd should be about restocking the stock-shelves, giving you control as to weather they can create new 'locations' for items that may not have a pre-designated area, or simply when you have too much of a product so they can make a new designated storage location.

I hope you don't feel bad or silly for not being previously aware, as it was implemented in one of the last two updates - Pretty sure it was the last one on the 6th Sept.

What I did for empty boxes was turn off stockers long enough to manually stock items to empty boxes of various sizes, then put those empty boxes on a storage shelf and they are left alone by the stokcers
