Typically do two shelves/half a rack per product except for those who sell a lot, like coffee, pasta, flour.
Then of course plenty of space for toiletpaper.
Storage is organized into same sections.
As for amounts on shelves, some items I found don't run out as quickly, so those get less space. Generally, however, I've seen 1 product/shelf used and it works pretty well. Less chance of the stock guys being unable to keep up.
Storage I'm still trying to figure out because something like salt can take up one shelf and last for weeks but some items only fit 2 boxes per space. I'm guessing I'll need to allocate more storage for those items in the future if I want to bulk buy and make a decent profit.
You could decide that your shelves should be in order in which you make morning orders every day on the computer. That's quite literally in the same order which you unlock licenses to sell different things.
You could decide to go the complete opposite direction and set your shelves up by the size of the boxes. After you've figured out where everything is on the ordering screen, It's a snap to look at the shelves and see empty holes that need filling based on the size of the boxes on those shelves.
In the end...it's whatever is right for you. You don't have to store anything in freezers or fridges. Put things where they make logical sense to you. :)
