Does it do anything if I buy more of them? More customers or cash spent? Anyone got any idea?

Customer count is based on your store level. Buying more licenses just gives you more products to sell. As your level goes up, you will not only get more customers but they will also buy more things each, so having more items to sell means more sales. I have only seen a customer buy eleven different types of items at once. It isn't necessary to get all the licenses, but advisable to get some at least.

Is it worth getting the freezer licenses? I heard bad things about it.

Bad things like what? I have all the licenses I can get up to 70 (except 2) and I have no problems. The only negative I see with freezers is that they cost a 'lot' in electricity per day, and don't have a huge amount of space.
