Taking a small break until...
Taking a small break until the next update. Im on level 14 or 15, and I just cannot keep up with even just restocking shelves during the day(yes I have 1 cashier), otherwise all my shelves will be empty within a few real life minutes.

While it is fun to see how much you can do while the game is running time, the time you take before and after Open Hours has no affect on how much the Bill is anymore, just lights, fridge, maybe checkouts and size too?

Im on Store lvl 37, Day 108, I have about 52 Customers a day, 3 Cashiers, and the only downside is that It takes me 20 minutes to order and stock. I have only had shelves empty on me a handful of times, but those were typically the after 9 rush.

I like to order before I open, then run around stocking through the day. Then I order back up supplies before 9, finish my stock through close (cashiers are very slow), and get an order for the next day. I like to go speedy, so I spent about 3 hours last night reorganizing my store so I could stock it quicker. It does get annoying to have a day that takes 45 minutes but that day needs to happen so you can have the following days be less than 20.

you know that time stands still until you open your store. So use that time for restock.
based on lvl20 40 customers:
1 shelf for 2 products is enought for most items. (except toilet paper, popato,...)
1 small fridge for 1 product or rather big/2.
1 freezer per product. (except chicken)

I'm at store lvl 19 or 20. I also order and stock the shelves before I open the store. I use about 1 shelf for 4 items, if it isn't bigger items like toilet paper that Huperspace mentioned.
I sometimes run out of an item at the end, close to closing time, but it doesn't really matter that much in my opinion. you get 4 store exp instead of 5 because of it (or what ever that number means that pop up).
So personally I feel that it isn't worth the stress of running around stocking the shelves during open hours and I can just focus on sitting at the register.

the big fridge is good for 3 items that don't sell quickly. 4 top, 3 on the bottom left and right. I use this for my Egg fridge (all 3 options I have now, largest eggs up top), A meat and Salmon Fridge (the steak, veal, and pack of salmon as the top), and a random fridge for Tuna on top, Butter, and Yogurt).

I do agree a good rule of thumb is 1 item per shelf side in most items. I just got my liquor license, so I'll see if those need more shelf space or less.

Perhaps I did not explain things well enough. Let me try again.

Considering my store size is not that big yet, I have to limit the amount of shelf space to 2 sections per item (4 sections in a full shelf). My store is as cramped with shelves as I can get it. I do restock all shelves to full capacity every morning before opening. I even have extra boxes of goods sitting around the store because customers seem to walk over/through boxes anyway so it doesnt matter. By noon (game time) many of my shelves are empty already and am busy on my computer reordering stock and refilling shelves. My customers buy too much stuff. If I had the physical room in my store I would use 1 shelf for each food item. Perhaps then I could get through a full day without worrying about restocking shelves during the day. For me, when things get this stressful and it affects my blood pressure, its time for me to take a break because its not worth it. Games, to me, are supposed to be fun and a way to escape the real world. Perhaps things will be better after the next update if/when the devs balance the game a little and add more staff.

Buy more shelfs. How do you price your items? At market price, over or under?

Get rid of your cashier. I'm at level 27 and can easely keep up with the checkout.

For ease, set your prices in whole $1 and $.50 to avoid too mush hassle when give change back.

Save power bill, don't unlock new items untill your shelfs and economy can handle it.

yes it's a good idea but on the other hand you don't have to unlock the product licenses to be able to balance the budget because the costs of the shelves are also a little expensive for some products
