Allocating Shelf Space for Products

Three. I am documenting, PRECISELY, every item sold, and their quantity.

Out of the initial product set, and the first two license upgrades (store level 14, currently), I have 2891 individual product sold, and have yet to run out of a single product.

Three shelves gets you from 24 to 60 products, depending.

Here's the breakdown. with number supported per shelf in parentheses:
Bread (16): Max sold: 20. Shelves needed: 2
Chok cereal (12): Max sold: 15. Shelves needed: 2
Blue flour (8): Max sold 19. Shelves needed: 3
Suzu (12): Max sold 25. Shelves needed: 3
Penne Pasta (12). Max sold 25. Shelves needed: 3
Green Oil (12): Max sold 25. Shelves needed: 3
Black Coffee (8): Max sold 18. Shelves needed: 3
Tea (20): Max sold 16. Shelves needed: 1
Bottled Water (8): Max sold 18. Shelves needed: 3
Cheese (9): Max sold 19. Shelves needed: 3
Eggs (12): Max sold 25. Shelves needed: 3
Milk (8): Max sold 24. Shelves needed: 3
Peanut butter (12): Max sold 18. Shelves needed: 2

The next set only has one day's worth of sales..too soon to determine shelving requirements. Tentatively, only 6-pk milk needs three, the rest two.

Total requirements? 54. Each shelf has 15 shelves, fridge units have 10.

This means 3 shelves, and 3 fridge units.

I see MANY youtubers with just ... massive amounts of shelves, and with very little need to carry four shelves of all products.

Currently, I have three of everything, and restock everything each morning. Why? I don't like taking time off of the register and running around crazy trying to beat a customer to a blank product shelf.

In the entirety of my 20 days, I have yet to run out of a single product, and I have also yet to stock a product in the middle of the day. I won't purchase a license until I can support it with shelves, AND to purchase the initial stock of three shelves.
