I also agree that a purchasable upgrade for the ordering system such as an inventory management system would be a great option so that you could set the amount of product you want to keep on hand each day and it would be auto ordered for you would be a great idea.
some thing the might help you with this (until NPC stockers are implemented) would be to set an entire section of shelves as one product (i.e. having four shelves of one type of bread on top of each other). But I agree about being able to assign specific shelves to specific product. This would not only help with the NPC stokers but also with inventory tracking.
