You can't buy extra chips mid-game as far as I know, so the entire pool of money in a High Stakes Poker game is the $125 buy-in times 5 players, if the table is full. $625 in total.
But you put up $125 of that, so $500 is other players' money. You can win a lot more than 500 CHIPS, but the total dollar amount of all chips on the table is $625, unless I am missing something.
Yeah, I wouldn't suggest using this method just to make money in general. Only for the $1,000 Gambling Profit required for Savvy Merchant Outfit.
