Don't bunch up your units or important buildings. Let the Titan have to walk across the map to kill the next target.
Greek? you only have a few heroes, but mythic age allows your unique unit along with a certain fortress technology that causes said unit to do bonus damage to Myth units. I tend to play Hades (yes I know lol), so Gastraphetes can do a surprising amount of damage while I have high health units micro/kite the titan away from them. I often also keep a small group of Gastraphetes with the archer building damage armory upgrade to raid their houses; if the enemy is focused on the Titan and dealing with micro against it, then it's likely they aren't paying attention to their own buildings untill I already cut their pop limit in half.

Egyptians? Priests/Pharaohs spam, Son of Osiris. If you want to have the last laugh, you may let the Titan roam free and destroy your units/buildings while you Roc Drop and equally wreck their own buildings/villagers. I love doing that since I'm a terrible, terrible person ;)
Norse? Hersirs/Jarls. I don't have much experience with this or Norse in general, though, but I assume ox carts allow you to easily move your gatherers and dwarves away.
Atlantean? Unit hero spam, but it's not going to work quite as well as you think. I'd rush to your own Titan if you can. Take advantage of the lack of drop sites for your villagers to spread them out so they don't all get killed at once.
You can probably rebuild what's destroyed just as fast as the Titan actually destroys things.
Don't get too focused on the Titan. It will die eventually; split up/move villagers away and recover! You need to focus on spreading out and staying alive; if someone actually bumrushed a Titan, they often have no resources to expand themselves or defend themselves otherwise, so it can actually leave them a sitting duck while you take total map control or destroy everything else BUT their titan. If you threaten them, they often will be forced to retreat their Titan to defend themselves and you'd be the scary one ;)
As has already been said, heroes are the most efficient way of straight up fighting it. However, unless you're eggy, it is probably not a good idea. This is because greek heroes can't be massed, and thus can be killed by the army with the titan. Hersir kinda suck in lategame (though if you have a few left over from earlier on then by all means use them). Also, both hersir and jarls are melee so they have to actually reach the titan (which can be hard if it is supported by an army. Also note that melee units can't kite a titan - which is far and away the best way of damaging it. Atty heroes are horrendously expensive (and anything other than hero arcus and to a lesser degree hero turma are a waste of time due to being melee - so cav support for the titan can screw you over). Eggy priests/pharaoh (especially with Nepthys upgrades) absolutely murder titans ( and all myth units) so a number of them (10-12) will deal with the titan reasonably well. They also train really quickly and are cheap, so they are not a particularly big sacrifice for the rest of your army.
Your own titan is also a valid response. Note that when fighting titan v titan, upgrades can turn the around. Upgrades that affect titans fighting include: eclipse god power (eclipsed titan will beat any other titan in a straight up fight - I think (it may lose to a bolted titan - idk)), hekate's mythic regeneration tech means the titan regenerates life (though, due to the amount of damage titans do to each other, this is somewhat negligible - it is left with about 150 health, I think), Hera's myth unit tech also buffs titans - though given I almost never see Hera, idk how much of an effect it has. There are a couple of others that I can't think of off the top of my head, but anything that effects all myth units will affect a titan.
However, the best way to deal with a titan is almost always to abuse it's biggest weakness - mobility. Villagers can very easily run from a titan so simply spread out and rebuild elsewhere while raiding your opponent hard/sneaking siege into their base/striking in 2 (or more) places at once. If you can kill all of his villagers (with fast units) while his titan is unsuccessfully chasing yours everywhere.
So probably, to sum up, I would say to split up and spread out while whittling away at the titan with ranged units (preferably fast, but most things are fast enough to kite a titan) and raiding/harassing/doing damage to him as much as possible.
Just keep the archers away from the Titan's stomp, or they're toast.
But be aware that the other guy also has army with which to counter your counter-titan-troops. Or just do more damage to your base (siege) ..
