I read a beginners guide on aom heaven, I believe and according to that greek is the most expensive civilization but has the strongest units?
All in all I don't really think it matters. It's not like you're stuck playing one forever, and knowing how the other cultures work is pretty important when playing against them. There's quite nice variety really: I'd go with trying things and seeing what appeals to you, if competitive play is your thing then there might be more considerations (sticking with one god is perhaps a good idea then) but at this point saying anything based around that might be a bit keen.
Egyptian, Greeks and Chinese are hard to play due to drop points, favor generation is not automatic, must make heroes separately.
But i think you should go with the civ that you find most interesting. As long as you enjoy the game nothing will be hard to learn.
Zeus is good for learning and Myth Armies due to higher Favor Cap
Posideon is king of the Cavalry Rush
Hades gets some nice gold trickle stuff and superior archers that can siege
Ra is the best Egypt god for an Eco Boom
Isis, you get monuments that can block god powers
Set is easier for food gathering as you can spawn your own animals
Odin has cheaper,faster and generally better ulfsarks, so you can easily rush
Thor has late game armoury and cheaper armoury tech
Loki is harder to play than the other norse but makes up for it with the most Myth Units Available and the crazy good Nigghog
Gaia is good for beginners with Atlantian
Kronus is basically Atlantian Zeus
Oranos is easier to defend as because Sky Passages are awesome
as for the Chinese Gods still working them out
seems to be that
Fu Xi is a Chinese Zeus
Nu Wa, maybe Economy Based
And Shen Nong... aint got a clue
Oranos:
He is one of the best gods for raiding the enemy due to speed bonuses etc. Plus, going all defensive lets your enemy freely expand. Lastly, Sky passages are expensive and pretty much not worth it to build until late game.
Each of the other civilizations has some kind of tweak on the formula for resource gathering/building. They also change around what generates certain untis and how they interact sometimes. For example, the viking axe throwers act like archers offensively, but are treated as infantry for defense/buffs and building things. The military aspect could be very confusing when you get outside greeks if you are not used to it.
