Thanks, like the op I want my plots to revert to empty so I can rearrange them. I will avoid him for now and hopefully the dev will add an on/off toggle later.
You can place signs on a field that already has crops in it. So check your seed storage, see what you'd like and then place the signs for them. He should plant that designated crop after the current ones have finished harvesting.

I do not know the appeal of a messy field seeded randomly with 8 different crop types... But how about a "Random"-Sign instead of automaticly assign a free-for-all behaviour to fields without signs?
