Need Center of Lift/Pressure and Trim Controls
The simplicity is good for inexperienced players, but as both a pilot and engineer, the bare minimum design features for any plane builder are both center of mass and center of lift and/or pressure (depending on how involved the aerodynamics are and if there's body lift or just wing lift).

Real planes are flown primarily with trim, so having a way to do trim would help a lot.

Definitely, also needs rate and expo adjustment

Flaps would be nice too. I know there's the air brakes that kind of serve a similar purpose, but they don't increase the stall speed of the aircraft.

you mean decrease the stall speed ? ( with flaps )

Have you tried rotators on your wings? A few degress do functionaly the same by increasing the AoA.
