If the buttons in the key bindings screen are grayed out, go to the character selection screen and click on the settings button and uncheck gamepad in the settings.
After that you can load your character and go to the keybindings menu and click on each of the buttons to remove whatever binding you have put on them, or just rebind them however you want by holding the mouse cursor over a button and pressing any key.
In your case the key bindings probably looks something like [Enter] KeypadEnter XXX where XXX is either empty or has some random key. You can fix it by having the mouse cursor over the Enter button and pressing enter (or whatever key you want to press to use most things) on your keyboard.
Once you have done that, press E to open inventory for equip/use and then move the cursor over a food item using arrow keys and then press Enter.
If that doesn't work then are you using some sort of gaming keyboard driver/software that maps your keyboard for some other game and it sends different key codes than what a normal keyboard would send?
