Sometimes, I've seen people go to Goat Castle and it says "Goat King" and sometimes it says "Goat Queen". Why is that?

Depends on the goat you're using. For example...the Tall Goat...is male for obvious reasons and the Feather Goat's male (you can tell by its coloring.)
