For example, in a regular shootout, I go with the Colt Navy because it's reliable, and it's fun to dual wield. But in team shootout, I go with Mare's Leg as my starting weapon because I know how to aim it.
Just take the time to learn the guns and you'll get a feel as to which is the best for you.

For team shootout, pick schoffield definitely.
For regular shootout, navy is practically the best (derringers technically), but if you're new, it might be much better to go for the sawed-off or even axe.
Revolvers: Whatever they feel most comfortable with. They all have their ups and downs.
Avoid using sawedoff as a beginner, you'll form some pretty bad habits and will probably get too addicted to it.
If you're starting out the schofield, carbine and mare's leg are all good options. Also try to open chests often if you're just concerned about survivability because they will give you good stuff (let's be honest, the coachgun is basically a get out of jail free card).
Not necessary. Sawed-off requires multiple weapons and such to really be a good starting weapon. I love to quickly run it with the sawed-off, picking off one or two people already on low health and quickly switching to a big gun, using it for general fighting.
I especially love using the sawed-off along with the coach gun. Ye'h, both have only two bullets but both reload them pretty quickly, and if you're smart. You'll either dodge attacks like a TF2-scout or take cover when reloading.
