first get some empty bottles. You can find one in the first Proving Grounds Portal in a Chest (Its before the first Lord). Another one is nearby behind some bookshelves (roll under the bars there).
If your're too slow, then exchange some armor to move faster or spend some points to increase the burden you can carry.
For the Boss itself: circle around him and wait until he strikes at you and then hit him one time when he's open. If he smashes his shield into the ground stay close to him, but not too close, because you get damaged. Also strike when you see an opening.
I fought him also as a warrior and found it usefull to use the spell "prayer" to distract him. In addition you get heald a litte through prayer.

Not true. I have tried this many times and the minions are still summoned even if you are the opposite side of the area. Also the gauntlet misse more times than it hits at any distance even with target lock on
