minimum melee attacks (usually running heavy attack once and then back up again) can be both one or two handed.
I see that you invested some on STR.
you can try using tower shield on your back,
or
try mastering shield bash (that if you use kite shield)
I dont understand how a lvl 28 cleric with much less attribute points can deal more damage than me AND receive waaaay less dmg from the enemies that destroy me....
I might just go with the typical and boring warrior class x( and see if its any different
Try rage instead of ram, takes less magic, does more damage and is just more fun to use imo, GL.
armors...
when you select your equipment, you will see "DEFENSE" value...
never look at that value... I really mean it... NEVER...
you will need to toogle for more info regarding that equipment, and then look for "physical defense",
this is the attribute that actually make you take less damage.
you may think that certain armors have very high defense, but still you got killed in few hits. thats because the armors have low physical defense.
fate axe is one of the most effective weapon, but not so good to be dual wielded (lacking jumping strong attack), however if you are comfortable, go for it.
using bigger shields give you better (more staggering) running shield bash

graveyard and courtyard bosses apparently doesnt require much mobility fights,
so fighting faster bosses may require you to change playstyle a little (or alot, depending how you wanna approach the game)
LoTF has a pretty steep learning curve, it never gets easy , easier maybe, because you know what to do , unlike darksouls which requires ESP lol and of course youtube videos and help from other players. Glad you like the game though, but just one piece of advice , soon as you can locate the heirloom hammer and upgrade it , (youtube video) once you have mastered the two handed overhead smash combined with rage , the game really opens up and you can begin to stack up the xp multiplyer, locate as many empty bottles as you can which will allow you to fight for longer.
The heirloom hammer is imo the best weapon you can get early in game , and will still be affective until the end of the game DMG = 120. it is possible to get it before the commander fight. side quest = yetka's dagger. GL.
After beating the Graveyard Boss you can access the Catacombs as well as another area.
What I found is that getting the strike right was all about timing. Finding just the right moment to connect made all the difference. Finding the creative balance for attributes was really tricky, but most of my points went into faith, strength and endurance. I went through like a glass cannon.
Once you figure out how the rhogar move, learning their timing becomes pretty easy for most fights. As a heads-up from my own experience, though, and sorry for the slight spoiler, you'll want to make sure you've got some good agility and even more endurance when you come back to the citadel the second time around. A heavy cleric build can make it through till that point pretty easily, but the enemies to follow will demand a lot more footwork.
Paired with the gauntlet and a high faith score, the Heirloom becomes a great friend to have.
