I can't beat infiltrator

I'm ♥♥♥♥♥♥♥ bored already after just 2 defeats. He damages me even if dodge out of the way so i had to resort to using a greatshield to block his strikes. Then came phase 2.
I give up on this ♥♥♥♥ if there's no way to cheese that ♥♥♥♥♥♥♥♥ phase 2. He can strike me and poison me through my damn shield. And to top it all off he heals himself near to full before i can strike him once!
I'm level 32. Should i be five times my level or why is this boss tougher than anything i've ever faced?

Try using great axe + heavy attack, thats how i killed that annoying ♥♥♥♥ after many deaths.

I've tried using my dark souls knowledge, got me nowhere. You can't break a turtling enemy's guard nor can you backstab them. I realized the only way to fight against turtles is to turtle yourself. Also it seems that the roll does not have many invincibility frames.

use prey magic, dont sign enemy but attack hes leg after 2-3 hits legs gets more demage because you destroy legs armor . Take heavy weapon and attack them and always try be close , when magic down and when you wait to reload magic sign boss and run around him

Stay up close-middle distance if you're using fast rolls. Wait for the 3 swings, get your hits in, rinse and repeat. I also used projectile magic when it was summoning those pools because you don't want to get close to them.
