I rolled back the driver to 566.36 and everything was fine with that game so I also figured it might resolve the issue with Spider-man 2 that I was holding off on buying until the whole bunch of issue everybody was reporting got resolved.
So I just bought it today and toggled every graphical option to max with ray tracing all at ultra etc. DLSS at balanced and frame gen on. Played over 3 hours flawlessly.

TLDR: Try using 566.36 driver from December

Just want to confirm that I did try this and was able to play for a couple hours with zero issues, no crashes or restarts. Maybe it does have something to do with the Nvidia driver. Thanks!
