Does cured food EVER rot?

I've had these cured spadefish in my pocket for gosh knows how long, and they haven't spoiled yet. I'd be grateful if that would last forever, but I don't know if it does.

One can only hope it is cured of whatever infection appears to have spread planetwide. I tried to shut down the ion cannon and it would not let me because I was "infected". I suppose it's a plot thing, and ever if I drink only bleached water or the water from the filtration machine, and completely avoid damage from sea life, I will still get infected.
