The issue with this is that as of now, and most likely this will not change, all above-water surfaces are pretty small. To add a giant land creature would end up with a very strange picture... Imagine putting an elephant on a perch for parrots and concluding that this is where it will live all the time, and it somehow will work just because it will.

They actually did have concept art for a giant whale creature. It was scrapped in favor of the Reefback, though. Sorry...
Just knowing there's a bit of dry land somewhere makes the whole world less scary. There's something irrationally terrifying about being on a planet that is 100% ocean when you can't breathe water.
